Salmon Carpaccio with Broccoli Super Sprouts

By thinly slicing the broccoli super sprouts and mixing them into the carpaccio sauce you are able to fully take advantage of all of the nutrients
Broccoli super sprouts are not bitter and don’t have a sharp taste so people of all ages, from young children to seniors will enjoy the taste
Ingredients for 1 person
Broccoli super sprouts — 1 pack
Salmon — 50g
Sesame seed oil — 1 tbsp
Lemon juice — 1 tsp
Salt — 1/4 tsp
Pepper — dash
Method
Thinly slice the salmon and arrange it on a plate
In a large bowl thoroughly mix the sesame seed oil, lemon juice, salt, and pepper.
Add the finely chopped broccoli super sprouts into the bowl and mix them into the sauce
Just before serving, pour the carpaccio sauce over the salmon
Hints for Success
When mixing the carpaccio sauce, a fast and efficient way to evenly mix together the liquid ingredients is to pour them into a large bowl and stir in a wide circular motion using the backside of a spoon
You can substitute olive oil or linseed oil in place of sesame seed oil
You can substitute sea bream (a species of red snapper) or octopus in place of salmon
This recipe pairs nicely with a glass of chilled white wine, and not only does it look gorgeous but it is very delicious when served as a canapé on thin slices of baguette.
